Wow, you are really into it then. Being self-sufficient would be a pretty amazing feat, especially in the city. What about Arrowroot, how hard would it be to grow a type of it in a greenhouse? I’ve heard of it used as a substitute. I believe Tapioca is a type of Arrowroot and it seems to have a nice “gel” consistency. I don’t really know anything about the processes involved. Although you could probably survive without gelatin or gelatin substituted products too.

Marshmallows were originally made with the juices of the March Mallow plant. This plant and other good substitues are hard to grow and harvest. Instead, you can make marshmallows with pectin instead of geletin and I wonder why vegitarian marshmallows are not being made somewhere commercially. My take on things is a little different then vegitarians… I want to set up to not need to buy anything. If you are a meat eater, you will have to raise and butcher your own animals but it is so much easier to just go vegitarian and just need a greenhouse. Geletin would be hard to produce from small animals which you would be raising in a city so pectin is the only alternative. I have made several of your typical geletin things (gummi candies, jello, pudding) using pectin instead but I am not sure how to concentrate the pectin yet.
